Tapioca flour or starch is often used in gluten free baking as a starch and thickener. It has a slightly sweet flavor and you don’t need a lot for most recipes so this big should last a while. It’s naturally gluten free and vegan as it’s extracted from cassava root. It’s a good idea to have this on hand as many gluten free recipes will call for it.
