Coconut flour is a versatile gluten free baking and cooking flour. It only takes a small amount in most recipes because it is highly absorbent and will absorb the liquids in a recipe. I typically only use anywhere from 1/3 to 1/2 cup flour in many recipes. It has a slightly sweet flavor so it’s great for baking desserts. It’s also gluten free, vegan and this brand is organic and non-gmo.
Coconut flour is low glycemic and won’t raise blood sugar levels. You don’t want to add a bunch of sugar to the recipe though. It’s a great alternative to grain flours and is used often in Paleo diets. It’s also high in fiber, which is great for building gut health. Those on a low FODMAP diet should avoid coconut flour due to the high fiber content until you transition slowly into adding more fiber.
