Cauliflower Crust Pizza

Make this healthy pizza for dinner tonight! 

The crust is made with cauliflower instead of grains so it’s perfect if you’re following a Paleo diet. You can also combine zucchini and cauliflower for the crust if desired. I like to buy already riced cauliflower that you can usually find in the freezer section. Or you can buy fresh cauliflower and pulse it in your blender to get the “riced” texture. I like to use my Vitamix blender as it will do a full head of cauliflower (cut into small sections). 

For topping you can use a dairy free cheese or regular cheese if you tolerate dairy. I like to add turkey pepperoni, fresh basil, olives, tomatoes and sometimes pineapple. I think Rao’s Homemade Marinara Sauce works perfectly on this crust for a slightly sweet marinara flavor. If you’re vegan, just add more veggies and remove the pepperoni. 

The crust is thin, but I do think the pizza is filling and one pizza works great for about 2 people to share. The best way to cook the crust is on a pizza stone or a pizza pan that has holes in it to allow the heat to flow through the pan. If you notice the crust is too watery or soggy as you spread it out on the pan, then try squeezing the extra water out using cheesecloth or a nut milk bag. The crust should be thin and slightly crispy. You can top with any veggie toppings you like. 

Cauliflower Crust Pizza

A healthy pizza for dinner!

  • 1 head organic cauliflower (about 3 cups riced)
  • 1 clove garlic or 1 tsp garlic powder
  • 1 organic pasture raised egg
  • 1/4 cup dairy free cheese
  • 1 tsp oregano
  • 1 tsp basil
  • salt & pepper, to taste
  • Rao's Sensitive Formula Marinara Sauce
  • Applegate turkey pepperoni
  • 1 bunch fresh basil
  • 1 can sliced black olives
  • 1 handful organic cherry tomatoes and/or cubed pineapple



Heat oven to 450 degrees. Cut cauliflower into small sections and add to blender or food processor. Add the garlic or garlic powder also. Pulse until it becomes a rice texture.


Place cauliflower rice in a microwave safe bowl and cook for 8 minutes in microwave. Set aside and let cool while you prepare the other ingredients.


Wash your basil and drain the black olives (I like to rinse them in water). Strain out the pineapple juice if using pineapple. Rinse the cherry tomatoes in water. Prepare any other veggies you like. 


Add the egg, dairy free cheese and spices to the cauliflower. Line a pizza pan/stone or baking sheet with parchment paper. Add the cauliflower mixture and press down until it is a thin crust. 


Cook for 15-20 minutes to get a crispy crust. Then top with more dairy free cheese and your toppings. Return to oven and cook additional 5 minutes or so.
