Citrus Dill Carrots

What’s the Big Dill with These Carrots? 

Adding fresh Dill really amps up the flavor of this side dish and a lemon infused olive oil gives them a citrus kick! My favorite brand is Enzo’s Organic Lemon Infused Olive oil.  Roasted Dill Carrots are slightly sweet and they pair well with filet mignon, chicken or quinoa.

Don’t have any fresh dill? You can also roast these with a balsamic vinaigrette dressing (2 parts olive oil to 1 part balsamic vinaigrette). Or try using regular olive oil and squeeze fresh lemon and lemon zest on them if you don’t have a lemon infused olive oil.

To really add more flavor, you can dip them in Sir Kensington’s Special Sauce – it’s oh so good together!

Did you know carrots come in multiple colors? The picture features rainbow carrots – beautiful colors of purple, orange, and yellow. They taste the same as orange carrots, but have different antioxidants that make up their colors. I like to buy these when Whole Foods has them to get a good variety of antioxidants in one dish.

I recommend cooking these on a piece of parchment paper to avoid the sugars from the carrots sticking to your baking sheet.

These carrots are a really big dill!

Ingredients

  • 1 large bag or 2 bunches organic fresh carrots
  • 1 bunch organic fresh dill
  • 2 tbl organic lemon infused olive oil or fresh lemon and regular olive oil
  • 1 piece parchment paper

Instructions

Pre-heat oven to 400 degrees. Rinse and scrub your carrots (with a veggie scrubber) under water to remove any dirt. Rinse the fresh dill.

You can cut the tops/bottoms off the carrots or leave them on for presentation. Lay carrots on a baking sheet lined with parchment paper.

Chop your fresh dill into small pieces.

Pour 2 TBL lemon infused olive oil in a small bowl. Dip a basting brush in the bowl and cover the carrots with the oil using the brush.

Sprinkle the dill onto the carrots. You can use dried dill if you don’t have fresh. Bake carrots for 40 minutes.

Optional- Serve with Sir Kensington’s Special Sauce for dipping.

Recipe Notes

If you don't have lemon infused olive oil, you can use organic olive oil and squeeze fresh lemon over the carrots.
