Filet Mignon

Have A Fancy Dinner Anytime! 

You’ll feel like you’re dining out with this quick and easy filet mignon recipe. The key is to purchase high quality meat and use a Cast Iron Grill Pan. Cast iron pans can be used in the oven at high temps, making it perfect for cooking steaks. Look for Organic, Grass Fed and Finished, Pasture Raised filet mignon. If that is not available, buy the best you can get. I try to avoid grain fed meats since grains are inflammatory to the animal and your body when you consume it and are typically full of GMO and pesticides. Plus, better quality meat really does taste better!

I find good quality filet mignon at Whole Foods for less than it would cost to go out to eat steak at a restaurant.

This pairs well with steamed or grilled asparagus and the Citrus Dill Carrots

Ingredients

  • 4 pieces Filet Mignon steaks, organic & grass fed
  • 2 tbl organic olive oil
  • 1 tsp salt/pepper
  • 2 tbl Earth Balance vegan butter, optional

Instructions

Let meat sit out at room temperature for 20-30 minutes before cooking.

Season both sides of steaks with olive oil, salt and pepper. Really put on a lot of seasoning as it comes off when cooking. Heat your oven to 450 degrees.

Heat a cast iron pan (this is the best pan to use) over medium-high heat on the stove top. Add your olive oil to coat the entire pan. Really let it get hot before putting the steaks on.

Put the steaks in the pan and just let them sizzle and sear. Don’t move or touch them until you’re ready to flip. Depending on the thickness of the steak, you’ll want to leave it about 2-3 minutes before flipping (sear longer if it’s a thick steak more than 2″ thick).

After searing for 2-3 minutes on one side, flip the steaks over and sear for another 2-3 minutes.

Before putting in the oven you can add Earth Balance vegan butter to the pan or Rosemary if you choose. These are optional. Put the entire cast iron pan with the steaks in the oven. Cast iron is durable enough to withstand this heat. Do not put regular pans in the oven at this temp!

Cook steaks in oven for 7-8 minutes. If you like steak more rare, it can take less time than that. I like a medium-medium well steak and it usually takes about 8 or 9 minutes in the oven.

When done, let your steaks sit on a plate covered in foil for 5 minutes to recapture their juices. You can serve with some of the juices from the pan. Pair with asparagus or any side veggies of your choice. Avoid asparagus if following low FODMAP.

Recipe Notes

For a SIBO or Low FODMAP diet do not add the Earth Balance Vegan Butter or Asparagus (pictured). Just use olive oil, salt and pepper and/or Rosemary for flavoring and serve with a Low FODMAP veggie you can tolerate.
