An Italian Flavored Dish Without the Pasta!
Are you craving Italian food, but can’t tolerate any grains or pasta? My solution is to make this chicken dish with minimal ingredients that give it an Italian flavor. It was just what I was looking for! I threw together ingredients I already had in the house and it came out better than expected. The best part is that it’s so quick to put together – you can literally just toss the ingredients into the crockpot without cutting or preparing anything first.
The Mediterranean Organic Sundried Tomatoes provide a ton of flavor and they don’t contain any garlic or onions if you’re following Low FODMAP diet. This pairs really well with spaghetti squash with Rao’s Marinara Sauce Sensitive Formula. It’s a great low-carb, low FODMAP dinner.
Other side dish ideas include steamed broccoli or my Mediterranean Quinoa. Or make a green salad with spring mix, strawberries, olives and a balsamic dressing.

Ingredients
- 2 organic chicken breasts
- 14.5oz can Muir Glen diced tomatoes
- 1 bunch fresh basil
- 5 organic sundried tomatoes
- 1 tsp organic italian seasoning
- 1 tsp organic oregano
- salt/pepper, to taste
Instructions
Place chicken breasts in the crockpot. Add the can of diced tomatoes over the top of chicken breasts.
Add the salt & pepper, oregano and Italian seasonings to the chicken.
Tear the sundried tomato pieces into halves or smaller pieces with your hands over the crockpot. This way you get more flavor in each bite without having to use as many sundried tomatoes.
Wash the basil and tear off the leaves you want to use and place in crockpot. I usually put 5-6 leaves.
Cook in crockpot on LOW for 6 hours.
