Roasted Cabbage with Fennel Seeds

Cabbage Helps Your Liver Detox! 

Cabbage is part of the cruciferous family of vegetables which are known to help the liver remove toxins from the body. Incorporate these roasted cabbage slices into your diet weekly.

These are super simple to make and the Fennel Seeds gives it a slightly sweet flavor. I recommend buying Spicely brand spices that come in small packages for herbs and spices that you don’t use often. They are around $2-3 instead of the typical $6-7 for a full size organic spice. I don’t use fennel seed very often, but it works great on these cabbages so I opt for a small package of it.

I recommend using a basting brush to help coat the cabbages with organic extra virgin olive oil before cooking.  For a low FODMAP diet stick to one cabbage slice and make sure you’re buying Green Cabbage, not Napa Cabbage (which is high FODMAP).

Ingredients

  • 1-2 heads organic green cabbage
  • 2 tbl organic olive oil (or just pour olive oil onto the cabbage slices)
  • 2 tsp organic fennel seed
  • 2 tsp organic basil
  • salt/pepper, to taste

Instructions

Heat oven to 400 degrees. Pour a little olive oil onto a baking sheet (you may need 2 baking sheets) and use a basting brush to evenly coat the sheet. Rinse the cabbage in water.

Turn cabbage on its side and slice into 1/4 inch slices and place them onto the baking sheet. It’s ok if some pieces are loose – just add them to the sheet.

Use a basting brush to coat cabbage with olive oil. Sprinkle them with salt/pepper, fennel seeds and basil.

Bake at 400 for 40 minutes. Store in air tight glass container when done.
