Roasted Cinnamon Carrots

- 2 bags organic baby carrots
- 2 tsp organic extra virgin olive oil
- 1 tsp organic ground cinnamon
Pre-heat the oven to 425 degrees.
Place your baby carrots on a cooking sheet and spread them out evenly. Place in oven and cook for 35-40 minutes.
When done, put carrots in a serving dish or glass container. Pour olive oil on them (you can decide how much you want). Evenly coat with olive oil while they are still warm from the oven.
Pour ground cinnamon on them. Cover the container with a lid and shake them good. This will help the olive oil and cinnamon to coat the carrots evenly.
Store any leftover carrots in a glass container in the fridge and have them handy as snack or side dish for later in the week. You can reheat these in the microwave easily for about 40 seconds.
