Roasted Cinnamon Carrots

Get a Natural Sugar Fix! 

This is a simple side dish to pair with any protein. Roasting carrots brings out their sweetness! Adding cinnamon helps to balance blood sugar levels and provide sweetness. 

It also works well as a snack to fend off sugar cravings without raising your blood sugar levels.

Store leftovers in Glass Containers in the fridge or to take to work. Don’t store food in plastic containers as they contain BPA, a toxin that disrupts hormone function and is linked to cancer. It’s considered a xenoestrogen, which means it mimics estrogen in the body and can disrupt your hormone levels. It’s a toxic chemical that your liver has to work harder to filter out. It’s very common in plastic items, cash register receipts, canned food items and more. Always look for items that say BPA-Free on the label or use glass dishes and storage containers instead.

Ingredients

  • 2 bags organic baby carrots
  • 2 tsp organic extra virgin olive oil
  • 1 tsp organic ground cinnamon

Instructions

Pre-heat the oven to 425 degrees.

Place your baby carrots on a cooking sheet and spread them out evenly. Place in oven and cook for 35-40 minutes.

When done, put carrots in a serving dish or glass container. Pour olive oil on them (you can decide how much you want). Evenly coat with olive oil while they are still warm from the oven.

Pour ground cinnamon on them. Cover the container with a lid and shake them good. This will help the olive oil and cinnamon to coat the carrots evenly.

Store any leftover carrots in a glass container in the fridge and have them handy as snack or side dish for later in the week. You can reheat these in the microwave easily for about 40 seconds.
