Whipped Sweet Potatoes

Sweet Potato Side Dish That Doubles As Dessert! 

These spiced whipped sweet potatoes are the perfect side dish to replace regular potatoes. Sweet potatoes are lower glycemic than regular potatoes and naturally have a sweet flavor. This pairs well with the Tri-Tip Marinade recipe. My family really enjoyed this dish, even those that don’t normally like sweet potatoes!

The star ingredient to make this dairy free is using Barlean’s Butter Flavored Coconut Oil. It is naturally flavored like butter using plants and flowers (no dairy!), but doesn’t have the coconut flavor. It adds the creamy texture in place of butter and milk. You can use regular coconut oil or a vegan butter if you can’t find this product. 

If you are sensitive to FODMAPs from the sweet potato, keep your portion size small about 1/4 cup serving size or less.

This is my go-to side dish for holiday meals because everyone loves it! Or to make it a dessert, top with So Delicious brand coconut whipped cream and sprinkle with cinnamon.

Whipped Sweet Potatoes

Satisfyingly sweet side dish!

Ingredients

  • 3 large organic sweet potatoes
  • 1/2 cup filtered water
  • 1/4 cup organic maple syrup
  • 3 tbl Barlean's butter flavored coconut oil or regular coconut oil or vegan butter
  • 2 tsp organic cinnamon
  • 1/2 tsp organic allspice
  • 2 tbl So Delicious brand coconut whip cream - optional

Instructions

Heat oven to 400 degrees. Pierce the sweet potatoes all over with a fork and place on baking sheet. Cook for 1 hour.

Cool on a cutting board or use oven mitt/hot pads to handle the potatoes. Cut in half lengthwise. Turn potato over and pinch the skin in the center and pull up to remove it. Discard all of the skins. They should come off easily.

Cut the potatoes with a chef knife into small 1/2 inch pieces.

Put potatoes in a large bowl and mash with a potato masher. Add 1/2 cup water, cinnamon, allspice, maple syrup, butter flavored coconut oil (melted in microwave for 30-45 seconds). You can optionally add a few tablespoons So Delicious Whipped Cream into the mixture (make sure it’s soft and not frozen).

Mix with a hand mixer first on low until everything is mixed well, then medium, then high. It will take several minutes of mixing to get it to a whipped, creamy texture.

Serve warm and store leftovers in glass container. For a dessert, top with coconut whip cream and cinnamon.

To make it a dessert, top with So Delicious brand coconut whipped cream and sprinkle with cinnamon.

You can modify this to remove maple syrup and use a few drops of liquid stevia or just a little of the coconut whipped cream depending on your taste.
